Altitudian Recipes - Potato Pancakes & Broccoli + Chickpea Rice Bowl

German Kartoffelpuffer (aka Potato Pancakes)
5 large potatoes
3-4 tablespoons flour
Peel and grate the potatoes and onion. Season the mix with generous salt, pepper, egg and flour. Mix together and fry like you would pancakes - voila!
Broccoli & Chickpea Rice Bowl (GF/V)
4 cups cut up broccoli
2 cups cooked brown rice
Tin of chick peas (drained, rinsed, patted dry)
1/2 cup sliced green onion
1/4 cup sliced almonds
1/4 cup chopped cilantro (coriander)
1 Tbsp fresh lemon juice
2 Tbsp pineapple juice*
2 Tbsp Dijon mustard
1 Tbsp olive oil
1 tsp Tamari (gluten-free soy sauce)
1 small garlic clove, minced
¼ tsp red pepper flakes
salt and pepper to taste
Steam broccoli until tender. Mix together: broccoli, rice, chickpeas, green onion and almonds. Make the dressing by combining ingredients and whisking together. Drizzle the dressing over the rice mixture and toss to coat. Season as desired and sprinkle cilantro on top.
